How does age change the impact of processed meat?
Older adults bear a heavier burden from processed meat consumption. A 2025 study in China found that colorectal cancer deaths and disability-adjusted life years (DALYs) attributable to processed meat were highest in older age groups, with mortality rates rising steeply from 1990 to 2021 [1]. Specifically, the age-standardized death rate increased from 0.23 to 0.32 per 100,000, and DALYs rose from 5.83 to 8.57 per 100,000, with the steepest increases occurring between 2007 and 2011 [1]. This means that as people age, the cumulative damage from processed meat becomes more pronounced.
Younger adults, however, show different patterns. A 2025 U.S. study of over 10,000 adults aged 40–100 found that those aged 40–60 were 47% more likely to reduce processed meat consumption during the COVID-19 pandemic compared to those aged 61–80, and over twice as likely compared to those aged 81–100 [6]. This suggests younger adults may be more responsive to health messaging, but it also implies older adults are less likely to change habits, making them a key target for interventions.
In Mexico, processed meat consumption remained stable overall from 2006 to 2020, but among 6–19 year olds, intake actually increased slightly [3]. This early exposure could set the stage for greater health risks later in life, as the effects accumulate over decades.
Do men and women respond differently to processed meat?
Yes, men consistently show higher risks from processed meat than women. In China, males had higher mortality and DALY rates from colorectal cancer attributable to processed meat in 2021 [1]. A Korean study of over 20,000 adults found that higher processed meat consumption increased the risk of dyslipidemia (abnormal blood fats) by 32% in men and 10% in women, compared to the lowest consumption group [2]. Similarly, a Finnish study on type 2 diabetes risk found that substituting processed meat with plant-based foods reduced risk in men but not significantly in women [4].
The biological reasons may lie in metabolism. A 2022 UK Biobank study of nearly 80,000 participants found that processed meat had sex-specific associations with blood metabolites: in women, it was more strongly linked to branched-chain amino acids and certain lipoproteins (which are risk markers for diabetes and heart disease), while in men, the associations were stronger with apolipoprotein A1 and creatinine [8]. This means the same amount of processed meat may trigger different metabolic pathways in men and women, leading to different disease risks.
Interestingly, a 2025 U.S. study found that women were 23.6% less likely than men to report reducing processed meat consumption during the pandemic [6]. This means that if you already have obesity or diabetes, eating processed meat may worsen your heart health more than it would for a healthy person.
A large UK Biobank study of 475,000 adults confirmed that higher processed meat intake was associated with increased risks of ischemic heart disease (15% higher per 70g/day), pneumonia (31% higher), diverticular disease (19% higher), and diabetes (30% higher) [9]. Importantly, body mass index (BMI) accounted for a substantial portion of these risks, meaning that overweight individuals are doubly affected—both by their weight and by the meat itself [9].
Genetic background also plays a role. A Korean study found that people carrying a specific variant of the APOA5 gene (rs662799) who ate high amounts of red and processed meat had a 70% higher risk of developing metabolic syndrome compared to those without the variant who ate less meat [7]. This shows that baseline genetic health can amplify the negative effects of processed meat.
